Millennium Chef's Salad

1/2 Savoy cabbage, shredded
2 Stalks celery, julienned
2 Granny Smith apples, julienned
2 Green onion, sliced
2 ts Cumin seed
1 tb Dijon mustard
2 tb Red wine vinegar
1/2 c Olive oil
1/3 lb Each: sliced smoked turkey, gruyere, prosciutto and salami
1/2 c Olives

Mix cabbage, celery, apples, green onions and cumin seeds together in large bowl. Whisk together mustard, vinegar and oil. Toss with cabbage mixture, cover and refrigerate for at least 1 hour.

Cut the sliced meats and cheese into strips. To serve, toss cabbage mixture again and place on large platter. Arrange sliced meats and cheese on top, garnish with olives. Yield: 6 servings
