Creole Potato Salad with Smoked Turkey 5 tb Cider vinegar
3 tb Sugar
1 Small onion,finely chopped
1 ts Salt
1 Fresh ground pepper to taste
1 tb Ketchup
3 tb Mayonnaise
1/2 ts Hot pepper sauce
1 1/2 lb Red bliss potaoes, boiled Peeled, kept warm
2 Ribs celery, peeled, diced
3/4 lb Smoked turkey breast,diced
In a small saucepan, combine the vinegar and sugar.Heat until the sugar
dissolves.Transfer to a large bowl and add the on
ions, salt, pepper, ketchup, mayonnaise and hot pepper sauce.Add the
potatoes, celery, and turkey and toss well.Makes 4 entree servings....
