Luncheon Salad 1 lb. smoked turkey (or Salmon, ham, etc.)
1/2 cup tomato
1 cup diced cucumber
1 cup cooked peas
3/4 cup diced celery
Sauce:
1/2 cup cholesterol free mayonnaise
1 Tbsp. sugar
2 Tbsp. lemon juice
Salt & pepper, about 1/4 tsp.
Toss all ingredients together. Chill. Serve on lettuce leaf, if desired.
