Chile Pasta Salad 8 oz Pasta; cooked & cooled
1 Head broccoli; bite-sized
1/2 c Onion; chopped
3 Plum tomatoes; seeded and diced
1/3 c Toasted nuts; chopped
4 oz Blue cheese; crumbled
1/3 c Parmesan cheese; grated
6 oz Ham or smoked turkey
Dressing:
2 tb Hot chile oil
1/3 c Red wine vinegar
3 Cloves garlic
1 tb Fresh rosemary; chopped
Salt & pepper
Blend dressing ingredients in a blender. Pour over salad & allow
flavors to blend for at least an hour.
