Caribbean Turkey Rice Salad 1 package oven hickory smoked turkey breast
3 cups cooked rice -- chilled
1 large tomato -- chopped
3/4 cup celery -- diag. cut
3/4 cup golden raisins
1/3 cup salted peanuts -- chopped
Dressing:
1/2 cup oil
3 tablespoons curry powder
4 teaspoons curry powder
3/4 teaspoon dry mustard
3/4 teaspoon onion salt or garlic salt
1/4 teaspoon Tabasco sauce -- up to 1/2
Cut turkey into 1/2" cubes.
Place in a large bowl with all other salad ingredients, except peanuts.
Stir together dressing ingredients and pour over turkey mixture. Mix well.
Cover and refrigerate for 1-24 hours.
