Old Fashioned Turkey-vegetable Soup 12 oz. zucchini, sliced
1/2 lb. mushrooms, sliced
2 cubed potatoes
1 lb. pkg. ground turkey
2 c. chopped carrots
1 tbsp. oil
1 tbsp. cumin
1 tbsp. salt
1 tsp. pepper
1 1/2 c. diced string beans
1 (16 oz.) can stewed tomatoes
1 lg. onion, chopped
1 clove garlic, minced
5 c. chicken broth stock
Saute onion in oil; add garlic and turkey and simmer slowly. Add spices, broth and tomatoes. Bring to boil, adding carrots, string beans and potatoes.
