Old Fashioned Turkey-vegetable Soup

12 oz. zucchini, sliced
1/2 lb. mushrooms, sliced
2 cubed potatoes
1 lb. pkg. ground turkey
2 c. chopped carrots
1 tbsp. oil
1 tbsp. cumin
1 tbsp. salt
1 tsp. pepper
1 1/2 c. diced string beans
1 (16 oz.) can stewed tomatoes
1 lg. onion, chopped
1 clove garlic, minced
5 c. chicken broth stock

Saute onion in oil; add garlic and turkey and simmer slowly. Add spices, broth and tomatoes. Bring to boil, adding carrots, string beans and potatoes. Add zucchini and mushrooms when carrots are soft so as not to overcook. Cook over medium heat until done, about 1 hour.
